Chai Any Way You Want It.

Chai is a belter, malty Assam with cinnamon, ginger and pepper. There is more to enjoy than brewing it hot... though we do love that. Try our Chai Latte, Chai Milkshake and Chai Spiced Shortbread, three tasty ways to get your fix. Chai Latte.

Our Chai Latte is the perfect balance of seasonal spices, slight sweetness, and velvety smoothness from the foamed milk. Top tip - if you like things a little sweeter, add an extra spoonful of maple syrup. We won’t tell!

WHAT YOU'LL NEED



For the Chai Concentrate {Makes enough for 2 x 300ml glasses}:

  • 20g of Chai Loose Leaf Tea;
  • 400ml filtered water.

TO MAKE ONE DELICIOUS CHAI LATTE:

  • 150ml of milk;
  • 1tsp of maple syrup or brown sugar - whichever you have to hand;
  • Cinnamon and brown sugar for the glass rim.


1. Make your Chai Concentrate by brewing the tea and freshly boiled water in your tea pot for 5 minutes, then strain.

2. Grab a glass, fill it half full with your strained Chai Concentrate and stir in your brown sugar or maple syrup. 

3. Heat your milk in a pan and whisk until frothy! If you've got a milk frother to hand instead - great stuff.

4. Pour your foamed milk into your glass.

Enjoy! If you really want to impress, make a cinnamon-sugar dust rim for your glass by dipping the glass rim in honey, then tap it into your cinnamon-and-brown-sugar mix.

 

Chai Milkshake.

This recipe is spot on for those with a sweet tooth. With a mix of vanilla ice cream, fresh and thick milk, homemade Chai syrup and a light dusting of cinnamon, it’s the perfect combination for a refreshingly autumnal milkshake.

WHAT YOU'LL NEED:

For the Vanilla Chai Syrup {Makes 400ml of syrup}:

  • 20g of Chai Loose Leaf Tea;
  • 2tsp of vanilla extract;
  • 400ml filtered water;
  • 300g brown sugar.

TO MAKE ONE DELICIOUS CHAI MILKSHAKE:

  • 3 scoops vanilla ice cream;
  • 200ml milk;
  • 1tbsp of Chai syrup {if you’ve got a super sweet tooth, go ahead and add 2tbsp};
  • Cinnamon to garnish.



1. Bring all of the Vanilla Chai Syrup ingredients to the boil in a pan and then simmer for 10 minutes. 

2. Once all ingredients have simmered, let them cool a tad before straining the leaves. 

3. Put your syrup into the fridge to chill for a couple of hours - hold tight, it’s worth the wait!

4. Grab a blender, bob all of your milkshake ingredients in and add your syrup.

5. Blend away for a few moments until it’s silky smooth.

6. Taste test, garnish with a dusting of cinnamon and enjoy!
 

Chai Spiced Shortbread.

If spicy, warming and sweet is everything you look for in a festive snack, this recipe is the one for you. Using our delicious Chai loose leaf, you’ll end up with a seasonal twist on a classic shortbread that’ll knock the socks off of your guests when they pop round to exchange gifts.

TOO GOOD TO HAVE JUST ONE...

FOR THE SHORTBREAD

  • 230g unsalted butter;
  • 100g caster sugar;
  • 3tbsp ground Chai Loose Leaf;
  • 260g plain flour;
  • 1/2 tsp salt;
  • Milk {small dashes, if needed}.

FOR THE ICING

  • 125g icing sugar;
  • 1/4 tbsp ground cinnamon;
  • 2tbsp water;
  • 1tsp vanilla extract.

THIS MAKES

  • 22 shortbread biscuits, plenty for sharing.

 

LET'S GET CRACKING

    1. Get your oven ready - preheat it to fan 170C degrees.

    2. Grab a mixing bowl and a whisk and cream together your butter and caster sugar until it’s pale and fluffy.

    3. Grind your Chai loose leaf into a fine powder and sieve 3tbsp it into the mixture, along with your flour and salt. Mix it together and add small dashes of milk {if needed!} until you have a soft dough.

    4. Dust your surface and rolling pin and pop your dough in the middle. Sprinkle a small dusting of flour on the top of the dough - not too much.

    5. Give it a roll until your dough is about half a cm thick and chop out your shortbread biscuit shapes with a cookie cutter.

    6. Lie your shortbreads on a lined baking tray, then pop into the oven for 18-20 minutes. Keep an eye out for their golden-brown colour.

    7. Bring them out and let them rest on a wire rack to cool completely.

    8. Get busy with the icing whilst they’re cooling to stop yourself diving in to taste! Whisk together the icing sugar, cinnamon, water and vanilla extract until you have a smooth, spicy icing.

    9. Dip your shortbread biscuits into the icing and set them back on the wire rack to let the icing set.

    10. Display them in your favourite biscuit tin and share them out. Awesome.
