STRAWBERRY MEETS ITS MATCH

This is a sort of "cheat's compote", with no cooking required. Take a couple of handfuls of ripe strawberries and give them a quick blitz, before adding some lemon peel for some added zing and brightness. For those of a sweeter disposition, hold your nerve, you can always add some vanilla essence to your milk if you want to amp up the sweetness, so don't go sprinkling granulated sugar into this.

MAKE AN ACE MATCHA

Doing your matcha too early will just result in having to rework it, so save yourself the additional labour by leaving this closer to the end. The berry sweetness of strawberry works beautiful with the green herby notes of the Matcha, but do make sure you're using a cooler temperature water to mix your matcha, otherwise you risk adding some bitterness in. Use 2g and whisk in 80ml water in a wide bowl, so it cools down a little as you do it.

TIME TO SERVE

Get your glass & ice together, and if you want a bit of extra sweet goodness, add a couple of drops of vanilla essence into your milk.

Drop a very generous amount of strawberry into the bottom of your iced glass, then top up with milk until it's three quarters full.

Game, set, matcha.

Here's where you gently pour your matcha onto the top of the whole shebang, and watch it do its thing. There you have it, your Matcha strawberry showstopper (though you'll want to give it a bit of a mix to distribute all that goodness).

Our matcha is fresh, vibrant and naturally slightly sweet, with a smooth finish and very little bitterness. Drink it straight, whisk it into a latte or pour it over ice. It’s great every which way you want it. Tastes: Sweet, bright, grassy.

We hear you ask, is it ‘ceremonial’ grade? The short answer is yes, by current interpretations of the label - but there is no universally accepted definition of the term. We have selected a superb, top notch, shade-grown, spring-harvested matcha with the right balance of smooth and rich to make it delectable by itself, or in any latte or iced drink, which is very firmly ticking every single box you’d want it to tick.
